Cherry Shortbread
Ingredients:
1 cup butter
1 cup confectioner’s sugar
1 tsp vanilla
2 1/2 cups flour (sifted)
candied cherries
Directions:
- Cream the butter then gradually beat in sugar.
- Add vanilla and flour, mix until batch no longer sticks to bowl.
- Cover bowl and refrigerate overnight.
- Roll out on lightly floured board to 1/2″ thickness and cut with a 2″ round cookie cutter.
- Place rounds on ungreased baking sheet and top each with a cherry (or half cherry).
- Bake at 350°F for 20 to 25 minutes.
