Sift Together:

  • 2 2/3 cups sifted flour
  • 6 tsp baking powder
  • 2 tsp salt
  • 2 tsp cinnamon
  • 1 tsp ginger
  • 1 tsp nutmeg

Mix together, then add to flour mixture above:

  • 3 cups seedless raisins
  • 2 cups currants
  • 1 1/2 cups mixed peel
  • 1 cup almonds, halved

Add the following to the above, mixing well:

  • 2 cups suet
  • 2 cups coarse bread crumbs
  • 3 cups apple (grated)
  • 2 1/2 cups brown sugar, lightly packed
  • 2 cups carrot, grated

Combine then add to the above:

  • 6 eggs (beaten)
  • 2/3 cup cold coffee

Sterilize containers and fill them 2/3 full (see Steamed Pudding Tips). Seal tightly.

Steam 4 hours.

Makes 5 quarts.

Steam for about an hour to reheat.

Serve with hard or brown sugar sauce.
