Christmas Pudding
Sift Together:
- 2 2/3 cups sifted flour
- 6 tsp baking powder
- 2 tsp salt
- 2 tsp cinnamon
- 1 tsp ginger
- 1 tsp nutmeg
Mix together, then add to flour mixture above:
- 3 cups seedless raisins
- 2 cups currants
- 1 1/2 cups mixed peel
- 1 cup almonds, halved
Add the following to the above, mixing well:
- 2 cups suet
- 2 cups coarse bread crumbs
- 3 cups apple (grated)
- 2 1/2 cups brown sugar, lightly packed
- 2 cups carrot, grated
Combine then add to the above:
- 6 eggs (beaten)
- 2/3 cup cold coffee
Sterilize containers and fill them 2/3 full (see Steamed Pudding Tips). Seal tightly.
Steam 4 hours.
Makes 5 quarts.
Steam for about an hour to reheat.
Serve with hard or brown sugar sauce.
