How To Prepare Steamed Puddings
Place pudding mixture in well greased pudding molds, in sterilized glass sealers or tin cans with tightly fitting lids (such as baking powder or coffee tins). Fill container 2/3 full and cover.
Place on steamer over boiling water or place on a rack in a kettle of boiling water. Add boiling water so that one half of the mold is immersed in water all the time.
Keep water boiling constantly.
Steamed puddings may be made in advance in sterilized closed containers and used anytime simply by steaming again to heat.
