Ingredients:

Part One:

2 cups flour
1/2 cup icing sugar
1 cup butter

Part Two:

4 eggs
2 cups white sugar
2/3 cup lemon juice
1/2 tsp baking powder
1/4 cup flour

Topping:

2 TBS icing sugar

Directions:

  • Mix the ingredients from Part 1 together until crumbly. Press into a 9×13 inch pan then bake at 350°F. for 20 to 25 minutes or until golden.
  • Next mix the eggs, sugar and lemon juice together (from Part 2) until smooth. Add 1/4 cup flour and the baking powder, stirring well. Pour this mixture over the crust.
  • Bake for approximately 25 minutes until set. Remove from oven and cool for 60 minutes.
  • Before slicing the squares, lightly dust the top with the icing sugar.
