Nanaimo Bars
Ingredients:
Part 1:
1/2 cup butter (softened)
5 TBS white sugar
5 TBS cocoa
1 tsp vanilla
1 egg (unbeaten)
2 cups graham wafer crumbs
1 cup coconut
1/2 cup chopped walnuts
Part 2:
4 TBS butter
3 TBS milk
2 TBS vanilla custard powder
2 cups icing sugar
Part 3:
4 squares unsweetened chocolate (melted)
1 TBS butter (softened)
Directions:
First Layer Base (Part 1)
- Place the butter, sugar, cocoa, vanilla and egg in a glass bowl. Set bowl in a pan of hot water and stir until butter has melted and is the consistency of a custard.
- Mix wafer crumbs, coconut and nuts together. Add this to the above cocoa mixture.
- Pack in an ungreased 6×10 inch pan.
Second Layer (Part Two):
- Cream the 4 TBS butter.
- Mix the 3 TBS milk and vanilla custard powder together. Add to the butter.
- Mix in the icing sugar.
- Spread this mixture over the chocolate base from Part One and allow to harden a bit.
Top Layer (Part Three):
- Mix the melted chocolate with the 1 TBS of butter. Use this as the top layer of the slice, covering the base evenly.
Final Step: Refrigerate until fully set, slice into squares.
