Peanut Brittle
Ingredients:
2 cups sugar
1/4 tsp salt
1 cup light corn syrup
1 tsp butter
1 cup water
1/4 tsp baking soda
2 cups peanuts
Directions:
- Combine sugar, corn syrup and water, cook slowly, stirring until sugar dissolves.
- Cook to soft ball stage (238°F).
- Add peanuts and salt. Cook to hard crack stage (290°F), stir constantly.
- Remove from heat, add butter and baking soda, stir slightly.
- Pour evenly over well greased pans.
- Cool by lifting around edges with knife. When firm, turn entire slab.
- When cold, break into pieces.
Yield: Makes 2 or 3 dozen pieces
