Ingredients:

2 1/4 cups flour (sifted)
1/4 tsp salt
1 cup sugar
1 cup butter
2 egg yolks
1 TBS brandy
4 cups pecans (finely chopped)
1/2 cup brown sugar (packed)
2 tsp cinnamon
4 unbeaten egg whites
confectioner’s sugar

Directions:

  • First sift together the flour, salt and 1/2 cup sugar.
  • Next add the butter, egg yolks and brandy. Mix well.
  • Spread evenly into a 10×14 inch pan.
  • Bake in 350°F oven for approximately 15 minutes.
  • Next combine remaining 1/2 cup sugar, the pecans, brown sugar, cinnamon and egg whites. Cook over low heat until sugars dissolve–stir continuously.
  • Increase heat and cook until mixture does not cling to sides of saucepan. Spread this over the baked base.
  • Return to oven for 15 minutes.
  • Cool a bit until able to handle without getting burned, then slice into bars.
  • Sprinkle tops of bars with confectioner’s sugar.
